Makalo & Makalo s’s Ochee Yaytsa

Makalo (Dipping Gravy) 

Ingredients:

1  cup flour                           Water to  right  consistency

3  tbsp. butter                        Sauce for Top:

1  tsp. salt                              1 tbsp. butter

1  tsp. paprika

Option #1:  Brown flour only in frying pan at very low heat stirring constantly. Add butter, salt and stir.  Add cold water stirring until correct consistency is reached.  Sauce:  Melt butter, add paprika, stir and pour over Makalo.  Pieces of white (feta) cheese may be added if desired.

Option #2:  Brown flour in melted heated butter, add salt and stir constantly until flour is brown.  Add beef broth stirring until correct consistency is reached.  Pieces of white (feta) cheese may be added if desired.  Or you may add ochee yaytsa as per recipe below

Makalo  s’s Ochee Yaytsa

(Dipping Gravy with poached eggs)

Everything is the same as in options #l or #2 above except when the makalo is finished, before serving, while it is hot,  break and drop the eggs one at a time evenly spaced into the makalo.  Let the eggs solidify in the makalo before serving.   The ochee Yaytsa (eggs) take the place of the (cheese)
