Yaps Rice Pilaf (via Eleni)

Yiayia (“Yaps) and Aunt Patty

Ingredients

  • Onions, 1 1/2 to 2 good size, chopped finely
  • Olive Oil, 2-3 tbsp (more if needed)
  • Tomato (diced) 1 small can
  • Chicken Broth, 32 oz.
  • Rice, Uncle Ben’s, Long grain, 2 1/2 cups
  • Salt
  • Pepper
  1. Preheat oven to 350 degrees
  2. On stove top, in an oven safe pan, heat oil. Once heated, add onions and saute until soft and translucent
  3. Add tomato and continue to saute
  4. Add chicken broth and bring to a roiling boil before mixing in rice, salt and pepper
  5. Cover rice and bake ini oven for 30 to 45 minutes until rice is softened and slightly crusty on top.
