Yaps Rice Pilaf (via Eleni)
Yiayia (“Yaps) and Aunt Patty
Ingredients
- Onions, 1 1/2 to 2 good size, chopped finely
- Olive Oil, 2-3 tbsp (more if needed)
- Tomato (diced) 1 small can
- Chicken Broth, 32 oz.
- Rice, Uncle Ben’s, Long grain, 2 1/2 cups
- Salt
- Pepper
- Preheat oven to 350 degrees
- On stove top, in an oven safe pan, heat oil. Once heated, add onions and saute until soft and translucent
- Add tomato and continue to saute
- Add chicken broth and bring to a roiling boil before mixing in rice, salt and pepper
- Cover rice and bake ini oven for 30 to 45 minutes until rice is softened and slightly crusty on top.
