Ingredients:
1 lb. Beans (Great Northern)
2 qts. Water
1 cup Chopped Onions
1 cup Chopped celery
1 tsp. Mint
½ tsp. Oregano
2 tsp. Salt
½ tsp. Paprika
½ cup Mazola Oil
½ tsp. Baking Soda
Wash beans thoroughly, cover with water, and let it come to a boil. Boil for five minutes, remove from heat, add baking soda, stir well,
Drain and wash with hot water. Put beans in a saucepan and cover
with hot water. Beans should be covered with at least one inch of
water. Cook over slow heat until beans start to crack. Add onions, salt and let cook for about one hour, or until beans are very soft.
Heat mazola as for frying, add paprika and pour over beans. It should sizzle into the beans.
